Nigiri
During the Second World War, nigiri-sushi became even more popular because rice rationing was introduced and pressed sushi required a larger volume of rice for every portion than nigiri-sushi. It was also during this time that sushi bars began to replace the sushi stands. Guests shared bowls with soy sauce and gari, pickled ginger, and dried their hands on drapes that hung behind them. A good sign that the sushi served at a particular bar was of high quality was the fact that the drapes were dreadfully dirty.
A lot has happened with sushi since then, and today, it is the world’s most wholesome fast food and it is time that we Swedes bring it into our own kitchens and make it a bigger part of our everyday lives.
