Tsü

A Tsü is a sushi expert - an expert at eating sushi. You don’t need to have visited Japan to be a Tsü. All you need is a burning interest and a curiosity about the different sushi bits’ tastes and textures. For someone who has learned that sushi is much more than shrimp and salmon there is no turning back. You know you are nearing Tsü status when you speak lyrically about the crispness of nori leaves, the feeling against the palate, the different qualities of tuna and what characteristics a perfect tamago should have. When the sushi chef starts to send you specially-composed sushis to taste and wants to hear your comments, you are probably already a full-fledged Tsü. The first step in becoming a Tsü is to:

  • Talk with the sushi chef. Be curious.

  • Learn from the sushi chef and donít be afraid to place demands on quality when you go to a new sushi bar.

  • Test new sushi bits. If the sushi chef asks you to taste special bits you are on your way to becoming a true Tsü.
